In a college town, “tacos and tequila” sounds like a solid business plan.
David Welsh, a former realtor with Caldwell Banker Blair and Associates for nearly 20 years, is behind the “extensive renovation” underway at the old Parthenon Café.
Welsh, who began leasing the space this summer after the Parthenon Café’s doors closed in May, is going to open an independent restaurant and bar called Tank’s Tacos and Tequila.
This is the first restaurant venture for Welsh, who currently manages his rental properties, but he joked about bartending and waiting tables “back in the day.”
As for the renovation, Welsh said that will include expanding the outdoor-deck space, installing a seven-foot car garage and adding a brand new tequila bar to compliment the specialty taco menu.
“We took out all the walls and put in beams, so it’s going to be one big open space with a covered porch on the side,” Welsh said.
A definitive opening date has yet to be set, Welsh said.
“We don’t know. We are jumping through a lot of hoops and hope to be open in October,” Welsh said.
