John Dean of Twigs Wins Wednesday’s Fire on the Rock Battle, Wise Farms of Mt. Olive Grows Secret Ingredient

On Wednesday night, two chefs of Blowing Rock establishments – John Dean of Twigs and Clark Barlowe of Heirloom – went head to head during the third contest so far in Fire on the Rock.

Dean won decisively, scoring the night’s best dish with the braised pork shoulder, golden beet and Asian pear mostarda, pickled pepper-daikon slaw and cornmeal hoe cake.

The secret local ingredients for the evening’s battle was daikon, beets and strawberry from Wise Farms, a fourth-generation family-owned operation out of Mount Olive.

While Barlowe doesn’t move onto the next round, he did win the dessert battle with his strawberry cake with beet ice cream with a beet-strawberry balsamic reduction and strawberry-mint chutney.
